Ingredients
- Boiled eggs
- Diced carrots
- Peas
- Onion
- Tomato (pureed)
- Puff Pastry (frozen)
- Coconut oil
- Egg (beaten – for coating)
Spices:
- Black pepper
- Garam masala
- Chili powder
- Salt (to taste)
Instructions
- Heat coconut oil in a wok.
- Stir fry onions until golden brown
- Add spices and stir to mix
- Add in the tomato puree and stir occasionally. Cook until the raw smell disappears
- Add in carrots and peas – cook until cooked (about 3-5 mins)
- Set aside
- Preheat oven to 400 degrees Celsius
- Slice boiled eggs
- Assemble a small spoonful of veggie mix, place a slice of boiled egg in a piece of the pastry sheet
- Wrap and seal using water at edges
- Coat with egg wash
- Place in the oven – bake for 20-22 mins or until golden brown
- Serve as is or with mint chutney/ketchup
