Kerala Egg Puffs

Ingredients

  • Boiled eggs
  • Diced carrots
  • Peas
  • Onion
  • Tomato (pureed)
  • Puff Pastry (frozen)
  • Coconut oil
  • Egg (beaten – for coating)
Spices:
  • Black pepper
  • Garam masala
  • Chili powder
  • Salt (to taste)

Instructions

  1. Heat coconut oil in a wok.
  2. Stir fry onions until golden brown
  3. Add spices and stir to mix
  4. Add in the tomato puree and stir occasionally. Cook until the raw smell disappears
  5. Add in carrots and peas – cook until cooked (about 3-5 mins)
  6. Set aside
  7. Preheat oven to 400 degrees Celsius
  8. Slice boiled eggs
  9. Assemble a small spoonful of veggie mix, place a slice of boiled egg in a piece of the pastry sheet
  10. Wrap and seal using water at edges
  11. Coat with egg wash
  12. Place in the oven – bake for 20-22 mins or until golden brown
  13. Serve as is or with mint chutney/ketchup
