Aloo Bhaji (Spiced Potato Fry)

The spiced mashed potatoes of your dreams!
Ingredients
- Potatoes – 3 large
- White onion – 1 large
- Tomato – 1 medium
- Curry leaves – 1 stem
- Jalapeno / green chilies – 1 small
- Mustard seeds – 1 tsp.
- Turmeric powder – 1/4. tsp.
- Salt – to taste
- Ghee – 3 tbsp.
- Water – 1-2 cups
Instructions
- Boil potatoes until soft (about 25-30 minutes on high)
- Dice up onions, tomatoes, and jalapenos.
- Heat 2-3 tbsp. of Ghee in a medium-size pot.
- Once hot, add mustard seeds and let it crackle – 10-15 seconds.
- Add cut up jalapenos and curry leaves and stir for about 5 seconds.
- Add onions to the mix with a sprinkle of salt and let it brown.
- Once browned, add tomatoes and turmeric. Fry until it looks something like this.
- Skin and dice soft potatoes (mash if gotten extra soft). Tastes great either way
- Add diced potatoes to the mix along with water once the tomatoes have softened.
- Let it cook, closed, for about 10-15 minutes.
- Taste and adjust salt accordingly.
- Serve with pooris, rice, chapatis or even sandwiches
