Aloo Bhaji (Spiced Potato Fry)

Aloo Bhaji (Spiced Potato Fry)

The spiced mashed potatoes of your dreams!

Ingredients

  • Potatoes – 3 large
  • White onion – 1 large
  • Tomato – 1 medium
  • Curry leaves – 1 stem
  • Jalapeno / green chilies – 1 small
  • Mustard seeds – 1 tsp.
  • Turmeric powder – 1/4. tsp.
  • Salt – to taste
  • Ghee – 3 tbsp.
  • Water – 1-2 cups

Instructions

  1. Boil potatoes until soft (about 25-30 minutes on high)
  2. Dice up onions, tomatoes, and jalapenos.
  3. Heat 2-3 tbsp. of Ghee in a medium-size pot.
  4. Once hot, add mustard seeds and let it crackle – 10-15 seconds.
  5. Add cut up jalapenos and curry leaves and stir for about 5 seconds.
  6. Add onions to the mix with a sprinkle of salt and let it brown.
  7. Once browned, add tomatoes and turmeric. Fry until it looks something like this.
  8. Skin and dice soft potatoes (mash if gotten extra soft). Tastes great either way
  9. Add diced potatoes to the mix along with water once the tomatoes have softened.
  10. Let it cook, closed, for about 10-15 minutes.
  11. Taste and adjust salt accordingly.
  12. Serve with pooris, rice, chapatis or even sandwiches
