Blueberry muffins
Wash and thoroughly dry the blueberries. Preheat the oven to 400°F.
Whisk the flour, sugar, baking powder, and salt in a large bowl.
Add eggs - one at a time and whisk.
Add vanilla extract and whisk
Sift together flour, sugar, baking powder, and pinch of salt. Fold in the dry ingredients into the wet ingredrients.
Add milk. Fold the mixture together so the air is still in there (folding = fluffy muffins)
Add blueberries and that’s right. We are folding again.
Line the muffins baking tray with muffin cups and lightly spray oil.
Add about 1/2 cup mixture to each - slide them into the oven
Bake for about 18 to 22 minutes. Cool muffins on a rack for several minutes before removing from pan.
Cool completely and store in an airtight container, up to 4 days
