Quick and Easy Oven Roasted Carrots

These caramelized carrots are to die for!
Ingredients
- Carrots - 1 lb. (thick-cut)
- Olive oil - 3 Tbsp.
- Pepper (generous coating) - about 1/2 Tbsp.
- Salt - 1 tsp.
- Parsley - for garnish
Instructions
- Preheat oven to 425°F
- Wash, clean and chop carrots in thick cuts or smaller - per your desire (I like them thicker because then it gets crispy on the outside and soft on the inside - absolute yum!)
- Coat with Olive oil, salt, and pepper
- Layout in baking sheet - make sure to have them not touch each other that much to ensure crispiness on the edges.
- Bake for about 20-22 minutes. Remove from oven and sprinkler with parsley
- Serve warm

Cut in thick pieces for better texture once baked -
Add olive oil, salt, and pepper in a bowl.
Coat carrots in the bowl thoroughly
Layout in baking sheet - make sure to have them not touch each other that much to ensure crispiness on the edges.
Bake for about 20-22 minutes. Remove from oven and sprinkler with parsley
Serve warm
