Jambalaya with a Twist

Ingredients

To marinade the chicken:
  • Chicken – 1 lb. – cubed
  • Hot dogs – 6 (1/2 dozen) – sliced
  • Mushrooms – 1-1/2 cups – sliced
  • White Onion – 1 each – diced
  • Red pepper – 1 each – diced
  • Green Onion – 1/2 cup – diced
  • Jalapeno – 2 – de-seeded and finely chopped
  • Minced garlic – 1.5 tbsp
  • Peeled plum tomatoes – 1 can – 28 oz.
  • Basmati rice – 2 cups – washed and soaked for at least 1 hour
  • Chicken broth – 2 cups
  • Olive oil – 2 tbsp.
  • Salt and pepper – to taste
  • Spices:
  • Cayenne pepper – 1 tsp.
  • Basil leaves – 1 tsp.
  • Dill – 1/2 tsp.
  • Taco seasoning mix – 1 tbsp.

Instructions

Marinate Chicken:
  1. Gather all the ingredients together
  2. Ensure to season the chicken well with salt and pepper
  3. Heat 1 tbsp. oil in a pot. Add sausages and chicken. Cook in medium flame until chicken is not pink anymore (about 7-10 minutes)
  4. Once the chicken is cooked; remove it from the pot and set it aside
  5. Heat the remainder 1 tbsp. olive oil – add mushrooms, onions, celery, red peppers, garlic, and jalapeno
  6. Cook in medium-high heat for about 6-8 minute or until mushroom and peppers soften
  7. Add the spices, canned plum tomatoes, chicken broth, and rice
  8. Cook this amazingly aromatic goodness closed in low-medium for about 12-15 minutes, or until you don’t see the water anymore
  9. Add the chicken and sausage mix to the pot along with the chopped up green onions; give it all a good stir
  10. This is SO good for a cold evening and every ingredient in this recipe can be substituted to your liking / whatever is available in your fridge. Works every time.

Notes

Pro Tip: If you’re having this the next day, as leftovers, I highly recommend squeezing half a lemon over the portion before you reheat. This step elevates the flavors to a WHOLE new level.

Gather all the ingredients together

Cook this amazingly aromatic goodness, closed with a lid, in low-medium for about 12-15 minutes; or until it looks something like this
